Coral Springs, Florida – The goal of 30-year-old pastry chef Hailey Rose, general manager of Coral Springs’ Cookiehead Bakery, is to make sweets that are clearly well-liked.
“That indicates that they enjoy it,” she said.
Her lifelong love of baking has contributed significantly to her culinary explorations, which have their roots in her Cuban heritage in Hialeah.
“Everything was made from scratch—there was a lot of cooking and baking at our family gatherings,” said Rose, who currently resides in Pompano Beach.
She became interested in baking early in middle school, influenced by cookbooks and family recipes.
She recalls how enjoyable and fulfilling it was to make cookies for friends and family.
Rose originally intended to work as a pastry chef in restaurants after graduating from Johnson & Wales University in North Miami with a degree in food service management.
But when she started working at the Salty Donut in Miami, her career took a different turn, and she fell in love with creating everything from scratch and experimenting.
Before starting her own catering business with a focus on cakes and pastries for events, she later worked at a pastry store in Miami.
Rose made contact with Gary Schwartzberg, a seasoned baker, in January 2023 as he was starting Cookiehead Bakery in Coral Springs.
Rose was excited to take on the position because Schwartzberg wanted to work with a professional chef who could add a unique touch to his bakery.
He remarked, “I wanted someone with Hailey’s background so we could work together.”
She was able to combine her inventiveness with Schwartzberg’s access to premium materials from around the world thanks to their collaboration.
According to Rose, she likes creating signature baked items and experimenting with seasonal delicacies.
She has a devoted following because to her signature chocolate chip cookies and brownies at Cookiehead Bakery.
In addition to baked items, the bakery serves coffee drinks and milkshakes, which Rose helped create.
Rose likes to sew and make savory foods to hone her culinary abilities while she’s not working.
She claimed that she still finds inspiration in the kitchen and enjoys watching her products make others happy.
And she always looks for that nod, the tiny but impactful sign of approbation, regardless of what she’s saying.
“I’ve always wanted to be in the kitchen, cooking, and working with wonderful ingredients,” she remarked.
